Savoury Picnic Muffins
When you are not sure what to bring, these are great.
Makes 12

Ingredients
  • 2 cups self-raising flour
  • 80g butter, melted, cooled
  • 1 egg, lightly beaten
  • 1 cup milk
  • 100g feta cheese, crumbled
  • 100g sliced ham, diced
  • 1/3 cup (50g) semi-dried tomatoes, finely chopped
  • 2 tablespoons pitted kalamata olives, chopped
  • 12 small sprigs fresh rosemary
  • Butter to serve
Method
  1. Preheat oven to 200°C. Lightly grease a 12-hole, 1/3 cup-capacity muffin pan.
  2. Sift flour into a large bowl. Make a well in centre.
  3. Pour butter, egg and milk into a jug. Stir to combine.
  4. Pour into flour well. Stir until almost combined.
  5. Fold through feta, ham, tomatoes and olives.
  6. Spoon mixture into muffin holes. Insert a rosemary sprig in the top of each muffin.
  7. Bake for 20 minutes or until a skewer inserted in the centre comes out clean.
  8. Set aside in pan for 1 minute. Turn out onto a wire rack to cool completely.
  9. Place muffins in an airtight container. Serve with butter.
